Mountains And Sands recipe with OMG

Steamed silken tofu, sesame ash, sugarcane Juice , dark soy

Ingredients

  • Silken tofu half packet
  • Full fat cream 500 ml
  • Sweet soy 100 ml
  • Dark soy 50 ml
  • OMG ginger groove 1 bottle
  • Apple cider 60 ml
  • Stock accordingly
  • Seasoning: Sugar (50 gms)
  • White pepper

Directions

Step 1: Marinate the tofu with salt and lemon, and steam at 91 degrees for 3 to 4 minutes.

Step 2: Take a heavy bottomed sauce pan, add the stock, cider and give it a boil.

Step 3: Add the cream with some stock.

Step 4:Gently add the sweet soy, dark soy, give it another boil. Add in the OMG ginger groove while whisking at high speed. Let it reduce on simmering heat to a nice sauce consistency. Check seasoning, add a bit of lemon juice.

Step 5:To plate
Mash the tofu with the back of the fork, and place on a plate like a shape of a mountain, Pour the sauce around the tofu.

How long have you been cooking?

I have been cooking for 8 years now.

Where did you train to be a chef?

Started very early at home, with my maa and my aunts, then professionally I started to train with the Hyatt hotels, and then with French chefs all through namely chef Jean Claude Fugier being my mentor.

Why did you choose to become a chef?

I was always inclined towards art, I guess the edible art got hooked on forever; also a particular heart break sealed my future that I was to be a mad cook.

How would you describe your ‘Style of Cooking’?

My cooking style is eclectic, experimental and storytelling, deeply rooted with French Spanish and Italian cooking techniques and philosophy.

What do you love most about OMG?

To be honest, the fresh smell of ORIGINALITY. Thank you for making me cling on to bottled drink again, sooooooo much of freshness and goodness, so much nicer and better than cola.
